Its not just there for the purpose of warming up the engine its to cool it without one it will get hot cruising it restricts flow so the radiator has time to cool the water without one or at least some type of restricter the water passes by too fast for the fins to cool it .
ALSO, some kind of restriction to slow the water flow to a correct amount will allow the liquid in the cooling system enough time to "pick-up" and transfer the heat from the block to the coolant and keep hot spots within to a minimum...
There have bee quite a few studies that show increased engine wear at temperatures of 160 and lower. Recommendations that I have read are 180 - 200 range for best engine wear.
