I am currently working on a 1942 Ford COE which we have set on a '93 E350 motorhome chassis and I was curious if anyone new of where to find a stand alone harness or had some information as to how to rework the harness out of the motorhome to work as I really would like to clean up the old nasty looking harness and remove any unnecessary things, however I also think with this build I may be better off using a new harness with new wiring to eliminate and future wire condition issues that may come along due to the age of the old wiring.

Thank for any help or information.

1993? That's not old. Unless the harness is chopped up or it was a burn, the harness should be fine.Get a wiring diagram and figure out which wires you don't need, unwrap the harness, pull the pins out of the plugs, remove unused wires, rewrap.Don't use black tape, use black wire wrap Takes some time but will.be better than anything you can buy.
