I thought I read on here somewhere that you can do away with the bypass hose from w/p to intake ?
I don't drive car in winter so a quick warm up is not something I really need .

I haven't done it on my Ford 460, but I have a big block Olds that always ran on the hot side. I blocked the bypass and removed the thermostat which resulted in it running noticeably cooler.

Yes, can block the bypass. Yes, must drill a couple small holes (or remove) the T-stat. And... don't rev the engine till it is hot... else you will leak at the T-stat gasket.
